I assume that the IOs datastore persists everything to its internal flash and is subject to the same problems as other file IO?

Yes, with respect to the life-span of the flash. I imagine that the datastore is subject to the same conditions, but this isn't highlighted in the documentation so I'm confirming my assumption.
