Where can I follow the recommended version for Email Security AsyncOS.

Funnily enough, they don't label a "starred release" for the ESA...
I've been in the beta program for over a decade, and I've never had a release that I needed to roll back from...
I would say that the latest General Availability (GA) or Maintenance Release (MR) are good choices.
Based on your concerns, don't use a Limited Release in production.
