Message tracking and mail_logs cannot be deleted specific to an email address, they roll over based on time and size allocated to their database.
Is there any particular reason why you are attempting to do this? These logs are needed to keep track of what emails were processed through the ESA and hence no option is available to remove specific content unless it rolls over itself once these logs get older.
