ESXi host is patched into the access switch and not an OoB Management switch. Is the ESXi host supported with Cisco ISE NAC? If not, we need documentation explaining ESXi hosts need to be exempt from Cisco ISE NAC. As for the VMs, how do we actually install or manage them, if supported.

ISE supports both MAB and DOT1X authentications. I believe ESXi does not support DOT1X but you should be able to use MAB to get the ESXi host on the network. If you need switch configuration example, please take a look at How To: Universal IOS Switch Config for ISE.
