For devices joining wired/wireless we can authenticate and authorize. My guess is that we could use Anyconnect NAM to deploy on builds they control but if someone were to try to deploy a guest OS with NAM they'd want to block it's access.

Citrix VDI support is explained in the discussion here - Re: Citrix VDI ISE dot1x support
I would believe the same should hold good for any guest OS as well . So if the guest OS has a dot1x supplicant or a NAM module, ISE can recognize it and you can control the access.
I havent tried it myself. I suggest lab it up and test it .
