Whatsapp communication protocol

Hello community

In  Cisco academy it says that P2P network works efficiently for instant messaging applications, and then I thought what protocol works for Whatsapp since it does use a centralized server. Apparently it seems they use Extensible Messaging and Presence Protocol (XMPP), so far I could not see such information on their site, they just inform about what type of encryption they use, so I needed to go around and see external sites and learn about that, kind of weird...

My question is; if XMPP is a decentralized protocol then, how can I understand that this is the protocol for Whatsapp if it uses servers?
