Is it possible to block the "bad" sub-reddits but allow most of the site?
Block reddit.com/r/nsfw
allow reddit.com/r/askscience ??

No, any DNS based system cannot block what you are describing since they are URL's, not domain names. If reddit used something like nsfw.reddit.com then OpenDNS could do something with it, but not with these addresses.

Sure, you can block URLs, but not with OpenDNS. Your router or locally running software would be able to do this.
