I was wondering if the domains that are used in the incognito browser of chrome will still show up on my report?

If the DNS traffic is sent to OpenDNS then they will show up in your OpenDNS logs & stats, incognito or any other "privacy" mode won't make a difference.
However, I don't use those modes, so I don't know if they bypass the DNS settings on your computer or not.

Perfect, I just wanted to make sure they would show up on the logs, that way I will know if certain types of domains are being accessed. I have heard that they do bypass the filters however, I know that these pages are being used on that format which is where the question generated from.

If the DNS traffic reaches OpenDNS then your filters are not being bypassed. I'm not sure what you mean by "these pages" or "format" however.
As for what you've heard, I can't speak to that since I have no idea what you are referring to. Generally speaking however, what people "hear" from casual acquaintances when it comes to technology or computers is so inaccurate and distorted to be useless. Most of it is a mix of old wives tales, myths, paranoia and flat out ignorance.
