I'm looking for some opinions for the case of using used and after-market SFPs specifically for use with Nexus 5548 and 6248UPs.

Hello
I don't understand your question very well. But if you're looking for supported sfp you can check the following link:
N5K-C5548P-FA | GLC-T (1000BASE-T) SFP-GE-S |
UCS-FI-6248UP | SFP-GE-S GLC-SX-MM | UCS Manager v2.0(1) — | UCS Manager v2.0(1) UCS Manager v2.0(1) |
Please clarify if you need further assistance with this issue.
Regards.
Wilson B.

As long as the SFP/SFP+ are Cisco branded (not "Cisco supported"), then you should be fine.
