There is a service called "AvADUnityMon" that does not start automatically. What does this service do and should it be running?

No, that service does not need to be running. Here's a map to all the services that matter for each version of 3.x:

If memory serves you'll only see that service with Exchange 5.5 systems, not for 2k. I think it only gets used by the install/configuration stuff, it's left at manual and not started the rest of the time... although I'll need to clarify what it gets used for, exactly, with the DOH-boys. I do know it does not need to be started, however.

One of the fine folks in the DOH group indicated this morning this service is actually used for the Unity Bridge (for talking to OctelNet nodes). It's installed but dormant unless you're actually using the Bridge. In later versions of Unity this was renamed to be a bit more obvious... it's now called "CsBridgeConnector".
