Is there a way that I can set up unity to send e-mail to external e-mail addresses from a message recording.

Could you give us some more info on your question? Are you trying to send from VMO in a Unified Messaging environment a voice message to a recipient outside of your company?

What I would like to establish is when a user listens to their voicemail, and presses (Std option 2) to Send a message that this message could be sent to any e-mail address like test@hotmail.com or well... anywhere.
Is this possible ??

If I understand your question correctly the answer is yes. You can setup internet subscribers (SMTP subscribers) that can be addressed from over the phone or via the desktop (they are created as contacts in the directory). If you leave them a voice mail over the phone an email with a WAV attachment is sent to the SMTP address supplied when you create the user.
These SMTP subscribers are not licensed (i.e. you can make as many as you like) since they don't have a local mailstore.
If that's not what you were fishing for, if you could give us a run through on what it is you'd like to do, we'll try and figure it out.

This was exacly what I needed to know. But now.... Can I do this without having fixed contacts i.e. read the address over the phone and let the voice recognition software determine the e-mail address?? or am I stepping too close to CRA scripts now?

No, you can't dynamically enter the SMTP address of a user you want to send/forward a message to - they have to be created as contacts ahead of time for Unity to be able to address them.
