QOS on GRE Tunnels for Voice and Video on VPNS

We are using Polycoms for our Video Conferencing. GRE tunnels are created on the router(3640) local, 1720 remote. IPSEC tunnels on pix 515 (local) 506 remote. Routing over EIGRP. The latency over the internet is about a 100ms. GRE tunnels do not have a granular way of QOS like Serial interfaces. I get jitter. Video hangs for a couple of seconds. I need to give strict priority to video, so that video traffic is never effected by any other traffic. I would like to use class based for strict priorities if possible.

What would you recommend ?
