Cisco Press can provide the Cisco Interactive Mentor and I've heard of one by Routersim (but not tried it !)

The Boson router simulator is ok for limited training, you might try it, although without knowing how in depth you want to go it's difficult to give you a complete answer. Cisco's Config Maker is also good and it's free.

There are two categories in this. Simulation and emulation.
If you are looking for a simulator, the best one available is Opnet ITGURU from www.opnet.com. However it is very expensive to the tune of $30,000
If you are looking for a emulator for a LAB test environment I would suggest www.ixiacom.com and www.shunra.com
Hope this helps
