Can I have a modem dialup client connect to a 3640 without assigning the client an ip address? If yes, what protocol can I run on this dialup link? Thanks.

When you are using ppp on the link, you could use IPX or Apple Talk as your networkprotocol.

What if I do not use ppp? Is there other encapsulation I can use?
Or let me put it this way, can I only run layer 2 protocol on the dialup link?

No..you need to have layer 3 connection in order to perform routing related activities..So you need ip address for data transfer on a point to point link..
Now you don't need ip address if you have application which runs on character based connection..
So in other words it all really depends what is the application requirement for that.
