I have servers that I want to bundle the gigabit NIC's together for both load balancing and redundancy. Do I use the HP teaming software to bundle the NIC's, use etherchannel on the 4506 that they are plugged into, or both? What are the advantages to each, and any links or documentation that can be supplied would be appreciated.

Both. On the Cisco switch you would configure the ports to be part of an etherchannel while the NICs themselves need to be teamed using HP teaming software.
