If you're looking for reference documentation, Cisco Press has a book called "Catalyst Field Guide" something like that .... It's a great reference, and give the commands for each (IOS and CatOS) for a given function.
There is also one for routers; full command reference, brief description of what it does, and a (very) brief overview of the technology / protocol along with some examples.
