I’m building a CISCO Lab. I want to physically connect a catalyst 3750v2 POE24 directly to a 1941 router. What is the appropriate physical cabling connectors?

Hello

you should be fine with a straight through cable as the 3750 support MDIX

Hello,

what are you after ? You need a straight thru standard Ethernet cable to connect the two devices. If you want to configure a router on a stick topology, the switchport needs to be configured as a trunk...

Regular Cat 5 or 6 is your option.  I would connect Router to switch1 to switch 2 to use etherchannels between switches.

For CCNA exam/learning, do not forget use Packet tracer from Net Academy as well. Beyond that, GNS3 is great for routing labs.
