Anything that's more involved than a basic configuration and set up

DHCP, 1 or more nodes  a few AP's maybe,

notably something where I get to modify the WLC settings a good bit would be nice

If you can download from cisco site, I´d recommend a virtual wlc.  But, the PT WLC can also give you direction.

Virtual WLC is great, but GNS has no AP's.

I've configured fresh virtual WLC's.  You'd have to buy the AP's and hook them into your PC.

Wireless is maybe the unique área where Lab demand a hardware for the Wi-Fi part. Unless you use PT, which works but with limitation, for more real lab, AP will be necessary 

 But, a end of sale AP will cost a little, maybe  worth it.
