Is it best practice to write statements for all your internal 192.168.X subnets or just put one 192.168.0.0 255.255.0.0 statement (e.g. 192.168.0.0 255.255.0.0 10.10.10.1)?

If you have only one exit point (gateway), it is best practice to summarize the routes, or simply advertise default route.

No there would be at least 2x gateways to send 192.168. traffic depending on the subnet.
So lets say I just had 1 gateway and I needed routes for 192.168.1.X - 192.168.254.X it is best to create the statement like this:
192.168.0.0 255.255.0.0 10.10.10.1
