When I'm setting up subinterfaces in my frame-relay lab; does specifying the subinterface type (point-to-point | multipoint) do anything other than cause the OSPF default config, appropriate to that subinterface type, take effect?

It will affect how your configure your DLCI.
Point-to-point uses the frame-relay interface-dlci xx command.
Multipoint uses the frame-relay map command (like configuring frame-relay on the physical interface).
