This is probably a dumb question, but can you use something like a qlogic 8152 CNA as just a regular 10gig network adapter and plug it into a 3750 or does it have to paired with a Nexus type device?

Checking the spec sheet, http://www.cisco.com/c/dam/en/us/products/collateral/servers-unified-computing/ucs-c-series-rack-servers/QLE8152_dual-port_10Gbps_FCoE_Rack.pdf it lists topology 'Any 10Gb Ethernet network', 802.3ae.
So basic Ethernet functionality exists even if you don't have the cool :) capabilities of Nexus switch platforms.
The ability to use FCOE or PFC depends on the upstream switches compliance with 802.1Qbb, 802.1Qaz,DCBX, etc

popped one into a vmware host and plugged it into a cisco 3850. Shows the SFP being inserted but shows as disconnected.

What SFP+ PID are you using to connect these?
On the 3850, run:
#show int tex/y/z
#show interface tex/y/z capabilities
#show interface tex/y/z transceiver detail
#show run interface tex/y/z
