Checking HSRP configurations on servers

Is there a way, from the network side, to differentiate that server connected to the network is using physical ip address of the router and not the HSRP?

Create an access list to log traffic to the physical IP address of the router.

ok, I need to clarify, I'm talking about traffic that is forwarded by the device not destined to the device.

Awkward if it's remote, but you could span the server port and run a short capture in wireshark ?

The router wont forward traffic from its HSRP address.  It forwards it from the IP address configured on the layer 3 interface.
