I was wondering if it is possible to setup a vPC if I don't have redunat links to the IDFs

What do you mean "redunat links to the IDFs"?
Can you explain or show a diagram of your design?

So currently to each of my IDFs I only have 1 fiber uplink to the top of rack switch that goes back to the MDF

If you only have a single link than vPC will not be helpful.
