currently I have switch A (3850)and its uplink switch B(nexus ) and C (nexus),
switch A int E1/1 connect to switch B E2/1, int E1/2 connect to switch C E2/1, switch A int E1/1 and E1/2 forms the port channel 1
switch B E2/1 is put in port channel 2
Now to delete all the trunk port. should i use default int range port -channel 1 or default int range E1/1-2?
should i default interface on switch B and C, then switch A, or should i do vice versa?

Probably the best (and easiest) way to proceed would be to shut the actual interfaces, then the logical port channel interface and then configure and/or remove the interfaces as you see fit.

since switch A connect to different switches ( Switch B and C), he has two parents port-channel, as i know VPC also has two uplink in different switches,
so what's the benefit of using VPC compares to the port-channel we use in switch A,B,C here?

If I understand your question correctly you are asking the benefit between vPC versus plain uplinks to two separate switches?
vPC effectively eliminates spanning tree loops and allows use of both uplinks simultaneously and sees the vPC uplink switches as a single switch, as opposed to having single uplinks to two switches where spanning tree would be a factor and one of the links would be blocked to prevent a loop.
