if I have a client that is looking for a certain destination ip address, would it be possible for the router to amend it using pbr of a class map etc ?

Hello Carl,
you may be fine with standard destination based routing.
PBR can be used in any case when you need to choice the outgoing interface based on other criteria:
source ip address or ip flow (including TCP and UDP port)
packet size
and so on
PBR is effective on inbound traffic on the interface(s) where it is applied

what im looking for is that when the client is looking for a certain desintation address ( a server) could i redirect it to another server ip ?

it looks like you need NAT for that to change the destination address of packets sent by host
