Yes, but it's not a simple thing.
You'll need to take all the local audio from the mics in to a mixer/dsp/etc to then feed them to your recorder as well as the endpoint. The far end audio, you then take out of the endpoint, and also send to your recorder. If the recorder doesn't have multiple inputs, you'll need to mix the local mic outputs with the far end audio and then feed into your recorder's single input.
In the basic diagram above, Green lines are the mixed audio from the microphones, blue is the far end audio.
