How can I redirect voice mail calls when the Unity server is down. Currently all calls go to busy when Unity is unreachable

This would be controlled by the phone system. If you are using CallManager 4.x or later then you might do this in the HuntList/LineGroup setup. For example, you could add some receptionist phones to a LG and then add that LG to the bottom of Unity's HL.

If we are using multiple Auto attendants and we want to redirect calls for each auto-attendant to differnt locations when Unity is down, would we have to dedicate ports to each AA?
We are running CM 4.1(3) and Unity 4.0(4)

You may have better luck with CCM call routing questions on the IP Telephony forum.
One possibility I might guess is that you could create different HuntLists for each AA. Each HL would include the same Unity LineGroups but then could have additional LGs, custom for the AA.
