please how i can change the name of the default gateway VPN for Anyconnect via ASA or via Anyconnect or anything else.

Do you mean the FQDN you use to connect AnyConnect to the ASA? if so, that is a public DNS record, so to change it you would need to change that DNS record to point to the new FQDN you want and that should be it.
