The VPN300 has a MIB (altiga) so you can monitor it with any SNMP based product. If you want long term trending you could use something like infovista (This is what I use but its not cheap) or for a snapshot of the current utilisation an SNMP station such as Castle Rock's SNMPc can graph IPSEC traffic. Don't forget the the cisco VMS product also covers monitoring for VPN3K's. You could also look at MRTG which I believe if FOC but you do need specific skills (perl I think !) to set it up.
