To make a long story short, my VPN is discombobulated and
needs to be reset so I can start from scratch. I have very limited training on the VPN side of things with Cisco. When I look at the running config, it looks greek. Is there a way to remove all VPN settings or set them all to default so I can simply run the VPN wizards in ASDM?

To rip out all of your VPN configuration, remove all the commands that begin with "crypto", "tunnel-group" and "group-policy".

The response given by jmunoz19 is true!
I know is not what you're looking for but the ASA has a nice feature when you want to reset the configuration back to factory settings (the entire config) with the command configure factory-default
I'll stick to the previous answer if I were you, but just want to share the option in case you want to wipe the running-config.

you can try:
clear configure crypto
clear configure tunnel-group
clear configure group-policy
