1600/2600e AP mesh/bridge with dual band antennas

Has anyone setup a 1600/2600 as a wireless mesh/bridge with the dual band antennas?  I'm curious to see how well they work with the dual band antennas and how well the 5Ghz backhaul works in conjunction to the 2.4Ghz client side.

I have used the 1600/2600/3600 for indoor mesh and they work fine. You just have to understand the difference between each model type. The 1600 supports CleanAir Express for example where the 2600/3600 is hardware based.

How about using them for outdoor mesh with external antennas?  I know that's not a "validated Cisco design", but am wondering if there would be any issues bridging with the dual band antennas.

Well for outdoor, you need to have the external antennas since the AP's will need to be in an enclosure.  You also have to make sure that the temperature doesn't go beyond the data sheet specs for operating temperature conditions.  Outdoor MESH AP's is really the way to go as it can be costly to us an indoor AP and retrofit it to be outdoors.
