I want to do an ACI access SPAN Session, but I need to do it on a Spine………can I do that?

correct, as RedNectar said, ERSPAN needs to be used. For that you need a GRE Endpoint which is the Destination IP.

you can do access Span only Leafs, like access called on "access ports". To do a SPAN on Spine you need to use Fabric Span instaed of Access Span. Below the HyperLink to Configuration Guide

As i then understand it:
Access span can be to a port
Any other span you need a destination with an IP address

Yes you can - you need to set up ERSPAN as a Fabric SPAN.
