Are there any major gotcha's to supporting a redundant service (behind a virtual IP) vending an IPPS app?  Anything in the solution (e.g., client state) that'd make it problematic?

This should work fine, and is the recommended approach.  An active web load balancer will of course work better than DNS round-robin.
