Your question actually pertains to Cisco DNA Assurance, which doesn't rely on SDA at all. So, the answer is the same even if Assurance is monitoring a legacy network.
Assurance relies on NBAR and netflow data from the network devices. There are NBAR signatures embedded in Cisco devices to detect MS Teams traffic, so Assurance can report the amount of traffic seen for it and most common protocols. Currently, to get qualitative data about Jitter, Latency, and Delay, the traffic needs to pass through a router which can feed performance monitoring data to Assurance.
I expect there will be more specific data for Webex Teams calls in future releases, but for MS Teams call, please submit a "make a wish" through the Cisco DNA GUI "make a wish" feature (in the "lifesaver" menu)
