Is it possible to open a separate chat window by default for every new sent or received IM?

I don't believe there's a way to get that by default, you can do that manually

There is no default setting, you need to use pop-out option in chat window to open it separately.

Yes it is:

Go to Settings -> Appearance and then change the app view from modern to classic aaaand you're done, everything like before!
