I'm googling for a document/checklist of what exactly a "Partner User" role and a "Partner Admin" have access to in customer's CX coud. I don't want a brief description. We need to discuss with our customer's what role should be given to who. Right now, only the customer can see such a checklist in the CX agent.

Not sure that a specific document about that exists outside of the CX Cloud application. A Super Admin in CX Cloud can go to Admin>Identity & Access > Roles. The table gives a high-level summary of the roles. You can click on the Partner Admin and Partner User roles to bring up a detailed list of permissions.
You can think of it this way
- Partner Admin is like Admin except that Partners don't get the Cases tab and Partners will have some asset data masked when that data is from a different partner.
- Partner User is like Standard user except that Partners don't get the Cases tab and Partners will have some asset data masked when that data is from a different partner.
