Hello,
No big difference! The FX3P is multigigabit with 2.5 and 5 Gbps ports capabilities in addition with the conventional speeds.

Actually there are some differences. FX3 has a newer generation of ASIC, meaning new capabilities supported: enhanced telemetry (SSX), working in FEX mode, PTP Telecom Profile and probably other specific ACI or VXLAN related features. And not to mention that price might be lower for the FX3 in the near future, if not already.
If you would have to choose between them, go for FX3.
