Eric,
Couple comments:
1. You're missing your native VLAN 19 on your "system-uplink" port profile. This needs to match your config of the phsycial upstream switchports.
2. You might also want to add BPDUFilter on your upstream ports - suggested Best Practice.
3. You "Management" port profile should be a system VLAN. This needs to be defined at the vEth Port Profile level & system uplink level to take effect.
If you do stack the 3750's, you can create a standard Port Channel on your VSM side "channel-group auto mode active" (LACP) and then port channel all upstream stacked switchports together also. In a stacked environment there is no vPC on the 1000v side. It views the stack as a single switch.
