We are seeing quite a few emails in message tracking that are missing the recipient and subject. Any ideas on why this would be happening?

Your question is a little vague, so there is no real way to answer. If you look at the step data, was the message dropped or rejected? If the server has a low reputation where the system won't accept the email you can get log of the connection, but it never gets to the point of getting a recipient or subject before it closes the connection.
