We have an ESA-C370-K9 ESA C370 Email Security Appliance With Software and we want to update the version 7.5 to version 9.7.0-125.
Reviewing the release notes, we see that to do this we must first upgrade from release 7.5 to release 8.0.1, then we have to upgrade from release 8.0.1 to release 8.5.6, then we need to update from release 8.5.6 to release 8.5.7-043, and since this release upgrade to release 9.7.0-125.

The problem we have is that the release 8.5.7-043 not on the web.

The upgrades are incremental - so, you will not see the next version hop until you upgrade forward.
Example:
phoebe-7-5-2-014 --> phoebe-7-6-2-014 --> phoebe-8-0-1-023 --> phoebe-8-5-7-043 --> phoebe-9-6-0-051
You are running 7.5.2-014 now... when you run upgrade on the CLI, you'll see the following available:
7.5.2-203
7.6.1-022
7.6.2-014
Once you upgrade to 7.6.2-014, and that reboot completes, when you run upgrade again, you now see:
7.6.3-019
8.0.1-023
Repeat upgrade in order to move forward again.
The upgrade paths do vary, based on where you want to go - as you are running an older version = 7.5. Be sure to check out the release notes for the versions upgrading to for complete details on which builds you can go to/from, etc.

You don't download the upgrade from the web site, those are full VM images for deploying virtual instances on VMWare or KVM.
Go to System Administration/System Upgrade. Then click on Online Help in the upper right, and it will take you to the documentation on upgrading.
Short version is:
1. back up config and Safelist/Blocklist if you're using it.
2. suspend listeners and let the workqueue empty.
3. apply latest available upgrade (the appliance will download it), reboot. WAIT FOR IT, it can take 20 or 30 minutes to complete after the reboot.
4. repeat step 3 for each version hop...

Another question?
We have updated the BIOS version 2.2.12C to 2.2.17C, and when we re-enter to continue performing updates, BIOS upgrade us again it appears.
It is normal?

This is normal. This is due to the provisioning of the patch for the appliance/serial-specific. We can de-provision the BIOS upgrade from the serial number if you like - you can email me direct (robsherw@cisco.com) or open support case.

As Ken as provided, these are the VMware full vESA images and not applicable to your physical ESA system.
Please upgrade your Physical C-series system via the GUI or CLI.
As for your device and upgrade paths, please share the end figures of your serial number and i'll check the upgrade paths for you.
EG: Serial number : XXXXXXXXXXXXXXX-NNNNNNN (we need the "N" part).
Finally, attached is an article that will assist you with the upgrades.
