Hello everyone,
I know we can sync call manager with AD to upload users and phones, but is it possible to use call manager to update some field in AD ?

Not directly no. You can pull from the API in the UCM and write back with some scripting. I believe Cisco Prime Collaboration Provisioning can write back to a LDAP directory with the right user permissions to do so. I don't know if it will work with AD myself but I know it could write back the telephone number I believe.
I couldn't get the software to work with our existing installation properly, and abandoned this effort.
