Look to your faxing vendor here for some product documentation. From CUCM's perspective it's likely just a SIP trunk to the fax server. You may need to enable T.38 fax relay on the MGCP gateway if you haven't already. You can do that from the Gateway Configuration page of the device in CUCM.
