We reserved a dedicated bandwitdth e.g.100k for voice by our MPLS provider.
Both voice control and voice stream are marked with EF. What happens now when this 100k is overallocated, could this affect the control traffic, cause we have sometimes interrupts?

Voice control is very little traffic, and usually not enough to hinder voice.
Most likely the MPLS cloud is not able to deliver the service promise 100%.
If you have routers of your own with service-policy configured you should be able to see how much traffic is being sent and if there is a matching between traffic and voice quality.

Another thing is to check with the MPLS provider. Some of them allocate certain "service planes". I.e., voice, critical data, non-critical data, etc.
So for instance, one provider we work with handles signalling traffic on the "critical" service plane. If they don't turn that one, they may not be passing your qos from end to end.
