Just wondering what the best probe to use for profiling Smartboards and IoT devices.

RADIUS with Device Sensor (enable CDP/LLDP, DHCP snooping)
DHCP
Beyond those, depending on how complicated/how granular you need to be on your IOT devices you may benefit from a solution like Cisco Endpoint Analytics, Ordr, or Palo Alto IoT Security (Zingbox).

Second vote for an external profiling tool if you want to do it more accurately. 

The best method is no profiling at all though, instead utilizing a robust endpoint onboarding workflow where you have employees classifying the mac before it ever hits the network.
