what a ccna has to be capable of?, I mean in the field what can a ccna set up in a router or switch?
how are those capabilities different from a ccnp? what can a ccnp do that a ccna can't

Depends on organisation structure, depends on experiece.
Someplace Prefer CCNA on basic level LAN/ WAN
CCNP for Advanced Level 2 / Levle 3 - give opportunity more tasks.
Someplace i have seen CCNA does everything. - choose the right boss, he will give you or teach you the right direction.

My Personal Point of you as per the Career growth Plan, Network / Security Engineer one should know everything - how they work, it may not be necessary you use all of them, but being the technical person you should have hands-on, use it when required.
Some environment may not required, some environment you required all your hands on..so when get opportunity learning everything what you can.

The technologies mentioned are not contemplated in the CCNA curriculum.
Now, I have seen CCNA graduates who have this knowledge because of the role they play in their work, as some are trained by courses or self-studies.
I tell you that I have seen people with CCNP who are very deficient in technical matters as well.
I believe that the technical issue depends a lot on the person and their desire to overcome and understand the technologies.
