from wich devices i can do extended ping and extended traceroute

You can do any IOS device

ping Enter (without IP will give you more option)

what about ping ip and ping with hostname i can do them from every ios device?

ping with hostname required DNS resolution, if you configured name server to resolve the hostname.

technically it should work for all the IOS as per my usage.

I know extended ping and traceroute from routers; not sure if extended traceroute is supported on all switches; some older version may not let you do extended traceroute/ping
