Hi,
I want to simulate attacks on switches / routers using Cisco Packet Tracer in VMWare Workstation. Is there any scope to do the same and simulate the attacks rather then doing on production environment ?

You cannot do much with Packet Tracer; at least you need emulators like GNS3, CML or Eve-ng, connected or running inside of VMWare, and couple of Windows machines. Emulators are using real or virtual "special" IOS that lets you practice security hardening. For more advanced security testing, Hackers use so called Kali Linux OS or Kali on Linux. You can get Kali for free, however, learning how to use it is another issue.

I do have kali with GNS3 ready on VMWare and want to simulate attacks. Kindly advise the links or videos from where I can get guidance.

To get step by step labs and videos you would need to sign up or purchase online security /hacking course(s) like CEH or CISSP. One other way is to get older CCNA Security book, read it and try to hack/penetrate your lab test network. Security books have listed security issues, threats and how to mitigate them. so those books can be used to learn how to test security by hacking.
My local library has several basic books on Security and Hacking, one of books I read some time ago - forgot exact title - listed many vulnerabilities in OS like Windows, wireless and other devices.
Kali has book about its Kali tools and you should be able to find more info about hacking using Kali on their website.
