Depends on the code you using as Controller and devices on the simulator.

you have many tools available like kali Linux like tools you use for testing's. (you can add one of the node kali linux when you simulating MPLS or Internet side and do the testing's)

This out of scope of this community - you have plenty documentation available over google how to simulate DDOS attack against devices.

as i mentioned kali linux does for you, also hping3  you can create tools box VM in the simulator lab.
