I have 2 Cisco ASA 5512x devices in production with failover configured but no secondary addresses. If I add secondary addresses with there be a traffic interruption? Just wondering if I need to schedule a real window or if I can just put the addresses on the interfaces.

Hell Darrell,
If u have 2 devices in production on "failover" with secondary addresses there will basically not be any failover hehe..
So go ahead and add it , make sure you have the failover secondary command on one of the units and add that configuration, there should not be any downtime.
I would always recommend a maintance window to avoid any issues that we are not aware yet (all of the networks are desing different).
That being said have a wonderful christmas day

There should not be an outage. That being said, always perform maintenance inside the maintenance window.
