This might be a dumb question but how would you set up the ASA firewall 1000 without internet connection? I have a switch that connects to it. I think I can console into it with putty but isnt there a gui ?

Admin123 won't work if you are on an ASA code. Did you try just to hit enter without typing anything after it asks you to provide the password?

A Firepower 1010 running ASA (I assume this is what you are asking about - there is no such thing as an "ASA firewall 1000") uses cli or ASDM as noted in the guide linked by @MHM Cisco World .
So, you can use the cli (via ssh or console) or ASDM. If ASDM is not already installed on your PC, then you can download it (requires Java Runtime Engine - JRE - as a prerequisite). You do so by going to the ASA via any allowed network to the configured interface(s) (see the running config for lines beginning with "http <address> <name of interface>") using your browser and append admin to the end. i.e., https://192.168.0.1/admin. Accept the self-signed certificate and login using local admin or defined username as the credential.
